It mostly depends on who you ask, but for the purposes of this magazine, we consider noodles to be a broad term for unleavened dough (made from a variety of flours—wheat, rice, buckwheat, and more) that is rolled, cut, and boiled. By our definition, that includes pasta in all its shapes and sizes.
